"Juice must be extracted in an enclosed juicing machine. Hand squeezing of juice for human consumption is prohibited."
The Lemon Rocket offers an enclosed juicing chamber where all juicing occurs.
"Juicing machine must be washed, rinsed and sanitized in a three compartment sink with hot and cold potable water before and after use or during any interruption in operation. The juicing machine may not be in use for more than 4 hours unless it is disassemble, washed, rinsed, and sanitized in a three compartment sink with hot and cold potable water."
The Lemon Rocket is made from stainless steel and all internal components can be easily disassembled, cleaned and reassembled in minutes.
And, we have an email from a Florida Inspector that alludes to any cutting of lemons must occur inside of the juicing machine.
In other words, they seem to be implying that covering the smasher / squeezer is simply not enough as the lemon would have to be cut outside of the smasher / squeezer before being using any apparatus for smashing / squeezing. They also imply a juicing machine must cut, smash / squeeze and juice all in one.
